THIS week’s recipe for our popular Recipe Corner feature is for a tasty Hungarian Beef Goulash.

The mouth-watering recipe comes once again from Deer Park Golf and Country Club chef Joe McFarlane.

His recipe is simple to prepare and tasty and would make a great family supper as it is guaranteed to whet every appetite.

Beef Goulash:

Ingredients:

500g sirloin steak, trimmed and cut into strips

olive oil

1 medium onion, peeled and sliced thinly

½ red pepper, de-seeded and sliced

½ green pepper, de-seeded and sliced

26g butter

sea salt and black pepper

5 tbsp tomato purée.

200ml beef stock

3tbsp sweet smoked paprika

small bunch flatleaf parsley

100ml soured cream

Method:

Warm a frying pan on the stove until very hot, then brown the steak in batches in a little olive oil.

Colour the onions and peppers in the butter and season

Place in one large pan, together with the browned steak.

Pour in the tomato purée, stock and paprika, season and bring to the boil.

Cook for between 20 and 40 minutes then garnish with the sour cream and flatleaf parsley.

Serve and enjoy!
